Heartwarming Comfort Food
Singapore has many Chinese restaurants offering dishes that are unique to a dialect group or a province in China. To sample the food of the Heng Hwa people, head for PUTIEN. The restaurant is named after the scenic coastal town of Putian which is located in the Fujian province of China.
PUTIEN’s cuisine is characterised by light, simple and healthy flavours. As a tribute to the original cuisine which features a variety of seafood and agricultural diversity, freshness of ingredients are held with utmost importance. Dishes are prepared with a gentle hand so that original flavours of ingredients can be drawn out and enjoyed.
Fried Heng Hwa Bee Hoon
A best-selling dish is Fried Heng Hwa Bee Hoon (rice vermicelli). The vermicelli is painstakingly dried under the sun instead of machine-dried to ensure that they are translucent, silky, fine, chewy but not brittle. The vermicelli is handmade with rice flour instead of starch to give it more flavour. Infused with a rich, milky stock, the vermicelli is fried with 10 sumptuous ingredients including fresh clams, shrimp, seaweed and peanuts.
A signature soup is the Bian Rou (Wanton) Soup, a Fujianese specialty which boasts over 500 years of history. The delicate wanton wrappers are made of pork meat that has been kneaded and rolled with wooden sticks and tenderised non-stop for hours in order to achieve its paper-like thinness. This technique is what makes this handcrafted wanton springy and palatable with every bite.

Other notable dishes include Seaweed With Mini Shrimps, made with 15cm-long top-grade seaweed that is harvested within 30 days after cultivation and red-tail mini shrimps from South China Sea; Stir-Fried Yam, a sweet-savoury traditional offering of fried yam cubes with a caramelised crispy exterior and light fluffiness within; and 100-Second Stewed Yellow Croaker which is stewed with ginger precisely for 100 seconds.
