Hilltop Garden Dining With Cable Car Views: Arbora
Enjoy captivating views of treetops, the Sentosa HarbourFront Precinct skyline and the running Singapore Cable Car line while dining 100m above sea level at Arbora.
Perched atop Faber Peak Singapore, Arbora takes its name from the Latin word “arbor”, which means “trees”.
The all-day dining restaurant serves a selection of Western dishes, some with creative twists, created by Executive Chef Kenny Yeo who is trained in French culinary skills, along with fresh-pressed juices, specially curated wines, craft beers and botanical-inspired cocktails.
To soak up the sweeping views and catch the sunset as night falls, sit in the alfresco garden section.
• Wild Mushroom Salad
A medley of porcini, black, button and portobello mushrooms sauteed to bring out their earthy flavours, topped with salad leaves and cherry tomatoes, and drizzled with balsamic glaze
• Chilli Crab Potato Skins
A modern spin on Singapore's iconic crab dish, potato skins are deep-fried till irresistibly crispy and filled with sweet and spicy chilli crab gravy
• Braised Beef Cheek
Marinated with port wine for no less than eight hours to infuse the meat with sweetness, the cheeks are then braised with red and port wine just before serving to yield a fork-tender texture plus rich and deep flavours. Served with smooth, creamy mousseline Idaho potato and roasted root vegetables
• Rack Of Lamb
Chargrilled Australian lamb chops served with an appetising sweet, sour and fruity sauce that’s made with black prunes soaked overnight in red wine, bell pepper and lemon, served on a bed of mashed potato with roasted zucchini, carrot, eggplant, tomato and pumpkin
• Smoked Duck Mushroom Ragout
Al dente spaghettini laced with smooth, rich cream sauce, tossed with spinach leaves and mushrooms, and topped with perfectly pan-seared smoked duck
• Fisherman’s Stew
A shell fish stock and tomato pronto-based seafood stew loaded with lobster, slow-cooked baby abalones, scallops, squid and Australian mussels, served with garlic bread for mopping up all the toothsome gravy
• Botanic Zest
Roku gin, honey, fresh young ginger, juniper berry with tonic chaser
• Honey & Spice
Pernod, Triple Sec with fresh lime and honey, spiced up with star anise and kaffir lime leaves
• Arbora Craft Beers
Lager, Summer Ale and American Pale Ale, all locally produced without using any preservatives
