Marinated overnight in sweet dessert wine, the duck foie gras is then flame-seared and served on crunchy baguette slices, topped with truffle balsamic pearls
• Citrus Fremantle Octopus
Sous-vide cooked Fremantle octopus drizzled with citrus oil, served with vine baby Pomodoro tomatoes and arugula
• Tiger Prawn Capellini
Angel hair pasta is tossed in aromatic lobster-infused oil and Japanese seaweed, and served with juicy giant tiger prawns sautéed Italian-style
• Côte de Boeuf
700g prime rib, sous vide then char-grilled, served with roasted marble potatoes, buttered garden vegetables and red wine sauce
• Dusk Till Dawn
Gin, vodka, rum, tequila, blue Curacao, lemon juice, peach syrup topped with cranberry juice
• Nitro-Frost Caviar Martini
